No, I don't work for any hotel. I work for a property development company base
in Hong Kong. My company is looking at developing a 5-star hotel in China.
I've posted this question in the forum because we (company, hotel, & the
architects) are into the designing phase and were debating on the size of
meeting facilities, F&B outlets and other facilities - some wants to reduce
their area plan while others want to enlarge the area plan... As I am only a
small potato in the company I have no way in hearing their debates yet I really
want to know more about the process and everything. So, I decided to seek the
opinions from the end-users' perspective and hence this question in the forum.
Traders in Penang Malaysia. I may indeed visit this great hotel one day when I
climb higher on the corporate ladder.
Just a final question: Does Traders hire "star chef(s)" for all 4
restaurants? I've heard these chefs can be demanding and very expensive... I
understand this may be business sensitive, so please feel free not to answer...

I also agree with you that independent hotels actually do a better job. Look at
the recent top 10 best services hotels as voted by the Travel+Lesiure readers,
it's easy to see that several (can't remember the exact number, I think it's
about 3 or 4 out of the 10) are independently managed.
Oh well, my company chose a branded hotel group, I just have to play along.
